Passionfruit-Pomegranate Quinoa Salad

Salads are great any time of the year, but they’re especially nice in the summer when you want something light and don’t want to spend a lot of time cooking near the heat.

I created this salad when I was drawn to lots of red food — pomegranates, passionfruits and red peppers — which are full of nutrients. Quinoa and black beans provide fiber and protein, so this salad can easily be a meal in itself. You could also serve it as a side dish, or spoon it into endive leaves for a healthy canap√©.

One great thing about this salad is the passionfruit keeps the mixture from being dry, so you don’t even need to add dressing to this — making this low in fat.

Ingredients

4 heaping Tbsp. cooked quinoa (about 2/3-3/4 cup)
4 Tbsp. cooked black beans
1/2 of a passionfruit
2 Tbsp. pomegranate seeds
2 Tbsp. chopped red pepper
1/2 tsp. dried basil
sea salt to taste

Directions

Prepare quinoa according to directions on the package.

Scoop out the inside of half of a passionfruit into a bowl. Add the rest of the ingredients and stir well. (You will have quinoa left over for another recipe.) Serves 2.
