Apple-maple corn muffin recipe that's gluten-free, dairy-free and egg-free

In the fall, a family’s fancy lightly turns to thoughts of warm, hearty comfort food. (Apologies to the poet Alfred, Lord Tennyson.) It doesn’t get very autumn-ish where I live, but we’ve had several dreary days of rain that made me want to cook some soup. While my soup was simmering on the stove, I was thinking about what to have with it and instantly wanted corn muffins.

I rooted around in my kitchen, hoping to find what I needed to make corn muffins. One son and I eat wheat-free, and another son is almost-everything-free, so I can’t just grab a mix or use most recipes for baked goods.

This corn muffin recipe was perfect with our soup (potato-leek), and a hit with everyone in the family. Even my husband, who doesn’t have food allergies or intolerances.

Apple-Maple Corn Muffins

Ingredients

1 cup corn meal or corn grits/polenta (I used organic polenta)
1 cup flour (I used an all-purpose gluten-free flour blend)
1/2 cup applesauce
4 Tbsp. oil (I used sunflower seed oil)
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
4 Tbsp. maple syrup (the real thing! — add a Tbsp. or two more if you really love the maple flavor)
4 Tbsp. milk as needed (I used coconut milk)

Directions

Combine the applesauce, oil and maple syrup. Slowly add the corn meal, flour, salt, baking soda and baking powder and mix until the ingredients are blended. (If you like, you can add bits of diced apple at this point.) If the mixture still seems dry, add milk as needed.

Spoon the mixture into a muffin pan (oiled muffin cups or paper cups, your choice), and bake at 300 degrees F for 20 minutes.

As soon as you take the muffins out of the oven, top each muffin with butter or your favorite oil, spread or topping. (I used an organic non-dairy butter substitute for my son with multiple food intolerances.) Serve warm. Makes six corn muffins.
