These chocolate chip cookies are free of the top allergens

Long before we had kids, my husband and I were cookie aficionados. Having grown up baking, I would make them, and he would eat them. (Well, I ate the cookies too.) His favorite was always chocolate chip cookies.

Finding out about all of our son’s food allergies put a damper on baking for a while. And now that both of our sons and myself are gluten free, many foods we used to eat have to be adapted. Including cookies.

I have come up with a chocolate chip cookie recipe that doesn’t use wheat, dairy, eggs, peanuts, tree nuts, soy or corn — most of the main allergens. The kids love them, and even my wheat-eating, chocolate-chip-cookie-loving husband loves them too.

Ingredients
1/2 cup organic shortening
2 cups cane sugar
3 Tbsp. applesauce
2 tsp. vanilla
2 tsp. baking powder
1 tsp. salt
1 cup white rice flour
1 cup coconut flour
(or 2 cups of your favorite gluten-free baking mix)
1/4 cup water
buttload busload lots and lots of chocolate chips

Directions

Heat your oven to 300 degrees F. Prepare a cookie sheet with a nonstick spray, oil, etc.

Put the shortening and sugar in a bowl.

(While taking pictures for this post, I found I had run out of shortening and used Organic Earth Balance instead. It does contain organic soy.)

Cream the shortening and sugar together.

Add the applesauce and vanilla, then stir.

Measure out the flours and add them, then the baking powder and salt. Mix well and stir in the water little by little. Then add the chocolate chips.

After you put in all the chocolate chips you can stand, mix some more.

Enlist some helpers if you like.

Kids love to help cook in the kitchen, especially if it's cookies! Their stuffed animals love it too.

Using your hands, scoop as much dough as you can in your palm. Make a firm ball, then flatten it and place it on the prepared cookie sheet. Make all the cookies this way.

Place the cookie sheet in the oven and bake for 12-15 min. The chocolate chip cookies should turn a light golden brown.

(I live at sea level and don’t know how to adapt recipes for high altitudes — sorry!)

Let the cookies cool for a minute before taking them off the cookie sheet.

Eat and enjoy!

  1. I’m always amazed at the many ways one can cook/bake the same recipe for individual needs. We luckily don’t have to worry about allergies and such but I’m trying to find healthier ways to enjoy the baked goods we love. I’ve been using whole wheat flour and a sugar blend made with stevia… so far I’ve had no complaints! :)

    • Susi, that sounds fantastic! We use stevia in our house too, daily. Yes, having to bake things without wheat, dairy and eggs has been challenging for me, but I have learned some excellent adaptations. Here’s to healthy eating!
