You see this deliciousness right here? This is a beautiful, tasty and filling vegetarian organic dish I devoured at Metro Organic Bistro on the Miami Chevy Eco Chic Tour. Chickpeas are pureed and made into patties, then layered with a butterbean, avocado and tomato mixture and seasoned perfectly. It’s definitely my favorite lunch in recent memory!

On the tour, I learned Metro Organic Bistro is one of three organic restaurants in Miami — surprising to me, considering that Miami is such a culinary/foodie city. Metro Organic Bistro practically makes up for that shortfall, though, in what it serves up for lunch and dinner indoors or on its covered patio (and you can come for breakfast on the weekends). You can choose from a grass-fed organic filet mignon burger with fries, ahi steak sandwich, lamb T-bones, a portabella mushroom panini catch of the day or other dishes — plenty of variety. The appetizers (tuna tartare, salmon carpaccio or just a simple salad) and desserts (tiramisu or creme brulee, for example) offer more organic tastiness.

The restaurant has a cozy boutique atmosphere with a South American vibe. However, that doesn’t mean people sitting at the bar on a Saturday afternoon won’t be watching their sports.

Metro Organic Bistro is in Miami’s MiMo district — the “real Miami” — which turns out to be a great place to find “real” food.
